I've just added 3 ranks back to your forum (just go to "Modify Ranks" and use the "Add New Rank" button) and have saved/edited them a couple of times. None have disappeared.
Can you let me know exactly what you are doing on that page when one disappears (eg. Adding a new rank, changing the number of posts required to reach a rank, removing a rank etc.) and what web browser/version you are using.

I've done a test in Firefox and am still able to use that page with no problems. Can you try adding a rank now and let me know the exact settings you enter for it (name, posts required & number of stars).
