Seems to only occur when each post is deleted separately rather than using the "Remove Topic" button. But I don't see where Wrighty deleted his post in the security log. So if someone can confirm how the topic was removed?

I was writing the post, went to post and the topic wasn't there! {Unsure}

It was deleted while I was posting.

OK, that explains the problem then and is something I can't do much about. I'll have to check the timestamps but it seems like your post was made at the exact same time as the topic was deleted. So when Jake deleted his post, the system looked and couldn't find any replies. Because of this, it proceeded to delete the topic and look for the second newest topic with which to update the last post column.
At the same time, you made your post and when the system looked, the topic still existed. So your post was made and then the system updated the last post column again, not realizing the topic no longer existed. At the moment, I can't think of any (efficient) ways to prevent fluke occurrences like that {Unsure}
